The company's ethos? “Have fun, be profitable, and make amazing beer.” Fort Collins, Colorado has a lot to offer: sprawling scenic views, historical sites, and the New Belgium Brewing Company. “Beer can be anything,” says Lauren Woods Limbach, New Belgium’s wood cellar director and blender. Limbach, who has been with the brewery since 1997, loves the thrill of working on a new batch because there’s room for creativity throughout the entire process. “It’s really up to you to redefine beer everyday,” Limbach tells Popular Mechanics.
